Pad Thai is only great when fresh squeezed lime is squirted in your eye and the dish at the same time. I took some big, flat pho noodles boiled in water for about 10 mins in one pot. Took some fat shrimps, garlic, tamarid juice, crushed hot pepper, onions, black pepper, sugar, egg, green onions and sauteed it together in a hot wok. Throw in the noodles, mix with care or it will break. Add the bean sprouts for less than a minute. Then, finish it off with roasted crush peanuts and the lime of course, on top. Done, dinner is ready! Don’t forget the sriracha hot sauce for the extra kick. Enjoy.
